My Danish Set Menu

Chef Kevin Saint-Jean Kristensen, the head chef of Tables Grill, is a native of Denmark and has a deep understanding of Danish cuisine. He grew up with local Danish food and wants to share the deliciousness of Scandinavian cuisine with everyone in Thailand without having to fly to Europe. The latest promotion, My Denmark, is a 5-course dinner set using special ingredients imported from Denmark specifically for this promotion. But before we try it, I would like to give you a simple understanding of Danish food. Denmark is a country with a very cold climate, especially in the past, when food was scarce and difficult to obtain. Therefore, Danish food tends to be preserved so that it can be stored and eaten throughout the year. In this review, we will try the taste of Danish-style food preservation. If you are ready, let's try Danish food.

The elegant and luxurious ambiance of Tables Grill restaurant at the Grand Hyatt Erawan Hotel.

The set menu price does not include drinks. For those who drink alcohol, we recommend trying the wine pairing.

The first course is a traditional appetizer platter featuring three dishes. It is recommended to enjoy them in the order presented in the review to experience a gradual progression of flavors.
'New Potato'
Bite-sized, smooth, and tender, with a sweet, buttery flavor and a well-balanced taste. A perfect introduction to the dish, setting a high standard.

'Ocean Trout'
Enhances the intensity of the dish with fragrant smoked trout, seasoned with a perfect balance of sweet, salty, and savory flavors. The addition of bread crumbs provides a satisfying textural contrast.

'Herring'
Full-bodied herring pieces pickled in the Danish style, with almost no fishy smell. The flesh is tender and chewy, with a rich, well-rounded flavor and no sharp sourness. It pairs well with dense rye bread, which complements the fish's softness. The dish is topped with seaweed that resembles beans, which is thick and has no distinct odor or flavor, but adds a pleasant crunch. This dish is highly recommended.

The second part is LEVEBRØD, which will come as a set.
'Bread, Butter, Brisket'
This dish features thick slices of imported ham and bacon, accompanied by chef Kevin's own pickled vegetables. The side salad is composed of imported Danish greens, known for their distinct sour flavor. These greens are recommended as a substitute for lemons, which are scarce, in dishes requiring a sour note.

The left homemade bread is dense and chewy, with a fragrant and nutty crunch from the various seeds. The right bread has a thick, hard crust that is both crispy and chewy, with a soft and tender interior.

Homemade butter infused with charcoal powder, resulting in an incredibly smooth and light texture. Topped with crispy fried pork skin or "แคปหมู" (a Thai delicacy), which is made in-house with a focus on maintaining the natural flavor and crispness of the ingredient. Unlike its Thai counterpart, the pork skin is not heavily seasoned. The butter is then smoked in a cup, infusing it with a delightful smoky aroma. This is a truly exceptional treat that is sure to leave you wanting more. Highly recommended.

The mustard on the left has a mild flavor and a fibrous texture, adding a pleasant textural element to the dish. The mustard on the right has a more intense flavor.

The combination of all ingredients in one bite creates a harmonious symphony of flavors. The sweetness and savory notes of the ham or bacon are prominent due to the generous portion size. The subtle buttery aroma of the charcuterie adds a touch of richness, while the mustard's spice and fragrance provide a delightful counterpoint. The bread provides a satisfyingly dense texture, and the pickled vegetables, with their nuanced sourness, elevate the overall experience. The interplay of these elements creates a refreshing and balanced mouthful, making this dish a true culinary masterpiece.

The next course is SOMMER.
'Crayfish, Lemon, Lovage'
Danish crayfish, the star ingredient, may be small, but its meat is firm and sweet, balancing the bitterness of fresh vegetables. The lemon sauce, with its subtle yet distinct aroma and richness, complements the dish perfectly.

The main course is MIN FLæSKESTEG.
'Pork Belly, Cracklings, Potato'
Succulent pork belly cooked for over 12 hours, melt-in-your-mouth tender. Paired with a fragrant and tangy sauce, or a creamy mashed potato sauce for a change of pace. The dish is completed with crispy pork crackling, adding the perfect textural contrast. Highly recommended.

'Strawberry, Soured Cream, Cardamom'
A refreshingly sweet and sour palate cleanser that sets the standard.

The sommelier's wine pairings were accompanied by explanations of their origins and rationale. Upon tasting, the pairings proved to be harmonious, enhancing both the food and the wine. You can be confident in the sommelier's expertise.
