Acclaimed by steak connoisseurs as premium quality, this breed boasts exceptional flavor and texture. Unlike other cattle, Rubia Gallega is raised to an advanced age of 8-15 years and dry-aged for approximately 20 days. Spaniards believe that older cows yield more delectable meat, characterized by abundant marbling, exceptional tenderness, and a rich, intense flavor.
This time, experienced chefs will create this special menu using three parts of the Galician Rubia beef: striploin, tenderloin, and ribeye. Each menu has been carefully selected to provide the best taste and texture, such as the menu.
The dish we savored today was Rubia beef tartare with light pesto and an olive tuile. The Rubia beef tartare was exceptionally delicious, with a texture unlike any other tartare I've had. It was incredibly tender and flavorful.
The next menu item is black charcoal-rubbed Rubia beef striploin served with grilled vegetables.
The cauliflower is a prime rib Reuben, seasoned with a special chef's blend of spices, and served with grilled vegetables.
